    Ingredients
  
    ¾ cup quick oats
    
     ½ cup oat flour
    
     ¼ cup sugar
    
     3-5 tablespoons dark chocolate chips or cacao nibs
    
     ¼ teaspoon cinnamon
    
     ¼ teaspoon pumpkin pie spice
    
     ¼ teaspoon salt
    
     ¼ teaspoon baking soda
    
     â…“ cup canned pumpkin or mashed sweet potato
    
     â…“ cup almond butter or natural peanut butter
    
     ½ teaspoon pure vanilla extract
    
     1 tablespoon chia seeds
  
    Let’s Bake, or Not!
  
Pop these in the oven, or make a no-bake version.
- If baking, preheat oven to 350° F.
- Combine all dry ingredients in a large mixing bowl.
- Add nut butter, pumpkin or mashed sweet potato and vanilla. Mix into a batter. If needed, soften the nut butter first to make it easier to stir.
- Roll dough into balls, place them on a cookie sheet and flatten slightly.
- If baking, put in the oven for 10 minutes. Let them cool for another 10 minutes. They will firm up as they cool.
