
Ingredients
- 3-4 cups (1 large bunch) kale, stem removed
- 1/3 cup dried cranberries
- ½ cup almonds, sliced
- 4 tablespoons Parmesan cheese (optional)
Dressing
- Juice of 1 lemon
- 1 tablespoon olive oil
- 1 teaspoon honey
- Salt and pepper to taste
Directions
- Chop kale into thin pieces by hand or with a food processor
- In a small bowl, mix dressing ingredients together; set aside
- In a large bowl, mix kale, cranberries, almonds and Parmesan cheese together.
- Pour the dressing onto the salad; toss well.
